蔥蛋 Omelette with Chopped Green Onions/Scallions

材料
Ingredients

1. 油
1. Oil

2. 雞蛋 1顆/1人份
2. Eggs 1 egg/serving

3. 蔥 1條
3. Green onion 1

4. 鹽 2匙
4. Salts 2 spoons

準備
Preparation

1. 打蛋:利用桌緣將蛋敲出裂痕,再將兩隻大拇指掐進裂痕,撥開蛋並將蛋白、蛋黃都倒進碗裡。用筷子攪拌蛋液。
1. Crack the egg: Use the edge of a table to make a crack on the surface of the egg. Put your two thumbs in the opposite side of the crack and pull apart the egg shell. Pour the egg white and yolk into a bowl. Stir the egg with chopsticks.

2. 切蔥:先把蔥鬚切掉,再把蔥切成大概0.5公分長的蔥段。
2. Chop the scallions: Firstly, chop out the root of the scallions, and chop the scallions into about 0.5 cm long parts.

3. 混合蛋液與蔥:把切好的蔥放到裝蛋液的碗裡並攪拌。
3. Mix the egg and the scallions: Put the chopped scallions into the bowl that contains the egg and mix them finely.

1. Heat up the pan

2. 倒蔥蛋液:把蛋液鋪滿平底鍋。
2. Pour the egg: Pour the egg until it covers the pan.

3. 翻蛋:當蛋液不再流動時,翻蛋!
3. Turn the egg: When the egg isn't flowing, turn the egg!

炒沙茶豬肉高麗菜 Stir-fried Cabbage And Pork With Chinese BBQ Sauce

材料
Ingredients

1. 油 2匙
1. Oil 2 spoons

2. 蒜頭 3粒
2. Garlic cloves 3

(在超市,蒜以蒜頭、蒜球兩種形式販賣,蒜頭就是剝好皮的蒜球,所以買蒜頭可以省略剝皮的步驟,但如果久久才自己煮一次的話,買蒜球比較好保存啊。)
(In supermarkets, garlic comes in 2 forms--garlic cloves and garlic bulbs. When garlic bulbs are pilled, they become garlic cloves. Buying garlic cloves saves time for peeling, but if you cook just once in a while, garlic bulbs can be more easily stored.)

3. 里肌豬肉 1盒
3. Pork Fillet/Tenderloin 1 pack

4. 高麗菜 半顆
4. Cabbage half head

5. 沙茶醬
5. Chinese BBQ sauce

6. 鹽 2匙
6. Salts 2 spoons

準備
Preparation

1. 蒜頭剝皮壓碎:先把蒜頭放在刀面下面,再用手和一點點身體的力量壓扁蒜頭,接著就可以比較容易把蒜頭的皮剝下來了。
1. Crush and peel garlic: Firstly, put garlic under the flat of a knife, and use your hands and a bit of your body weight to crush the garlic. Then you can peel the garlic easily.

2. 豬肉退冰:像是如果豬肉是從冰箱裡拿出來的,就要先退冰哦。
2. Defrost/Thaw the pork: Like if the pork is in the fridge, it needs thawing beforehand.

3. 高麗菜撕片:像吃火鍋一樣,把高麗菜用手撕成一片一片的哈哈。
3. Tear the cabbage: Like when you are having hot pot, tear the cabbage into pieces with your hands.

作法
Steps

1. 油熱鍋:在炒鍋裡倒入油、蒜,開火,讓蒜爆香。等油起紋路(也可以用手沾一點水潑在鍋裡,聽聽看有沒有啵啵啵的聲音),就熱好鍋了。
1. Heat up the wok: Pour oil and garlic into the wok, turn on the stove, and sauté until aromatic/fragrant. After there are some strips on the surface of the oil (or you can drop some water to see if there are sounds of "bobobo" coming from the oil, which means the oil heat is hot enough.)

2. 炒豬肉:炒豬肉時要一直翻攪肉,因為肉很容易會黏在鍋底、炒焦。
2. Stir-fry the pork: When stir-frying the pork, make sure you stir it constantly because the pork will easily stick to the wok and be burned.

3. 炒高麗菜:等豬肉半熟時,接著炒高麗菜,也要翻攪!!
3. Stir-fry the cabbage: When the pork is half cooked, stir-fry the cabbage, and stir!!

4. 沙茶、鹽調味:倒入沙茶、灑2匙鹽,繼續翻攪到調味均勻就ok了!
4. Add Chinese BBQ sauce and salts as seasonings: Pour some Chinese BBQ sauce and 2 spoons of salts. Continue stiiiiiiirrrrrring until the seasonings are mixed with the pork and cabbage. OK!

糙米飯 Brown Rice

材料
Ingredients

糙米 1杯米=2碗飯
Brown Rice 1 cup of uncooked brown rice=2 bowls of cooked brown rice
水 1杯米=1.8杯水
Water 1 cup of uncooked brown rice=1.8 cups of water

準備
Preparation

1. 洗兩次米:把米倒進電子鍋內鍋,再倒水至水位微微高過米就好,用手洗米。洗好米後,微微傾斜內鍋就可以把水倒掉又把米留在鍋內。重複此步驟,洗第二次米。
1. Rinse the rice for 2 times: Pour the rice into the inner pot of an electric cooker, add water until it covers the rice, and rinse the rice with your hands. After rinsing the rice, tilt the pot a bit so that you can pour the water away and leave the rice inside the pot. Repeat this step to rinse the rice for the second time.

2. 米泡水30分鐘:把洗完米的水倒掉,讓米泡在乾淨的水30分鐘,讓米在煮的時候比較快熟。
2. Soak the rice for 30 mins: Pour away the water, and add clean water to soak the rice for 30 minutes. Rice can be cooked within shorter time if soaked.

作法

1. 煮飯:把泡過米的水倒掉,接著以1杯米:1.8杯水的比例,把水倒進內鍋。把內鍋放進電子鍋裡,並將電子鍋插上電,按「煮飯」。再等大概半小時,顯示「保溫」時,飯就煮好了!
1. Cook the rice: Pour away the water, and add 1.8 cups of water every 1 cup of rice. Put the inner pot into the electric cooker, plug it in the power cord, and press "Steam." After about half an hour, "Steam" will change into "Keep Warm", and the rice is cooked!
